You can bring up a little menu explaining the default controls by pressing F1 while a game is running.

Changing the controls through a menu is not yet implemented - and never will be as things look now.

The only way to change the controls is editing the file 'fwp.cfg' (it is either in '~/.fwp' or in './cfg', depending on the installation you chose). Scroll to the lines saying 'input.bind [key] [action]' and change them to suit your needs. (Alternatively, you can issue the command from the in-game console.)
